Butter Chicken


Butter chicken one of India's favorite dish. You xac butter chicken in almost all indian restaurant menus, it is one the bestest best dish of India I can say. We often try to experiment different dishes when we go to any retaurrest but again we say nothing can beat the taste of butter chicken. We often think we cannot make or it is impossible to make butter chicken at home, then you are absolutely wrong. Making butter chicken at home is easy but has mutliple steps, which you can't skip. If you skip then you will not the taste of restaurants.

There are around 4 steps in making perfect butter chicken recipe. The first step is the marination. If you don't marinate the chicken then the chicken will not become soft and would become rubber like. So marination is always important. The second step is grilling the marinated chicken. Usually in restaurants they gdill the chicken in traditional tandoor. So if you have a traditional tandoor or elelelec tandoor then you can grill not that. And if you don't have any of that, no worries you can still grill it on the grill pan, as did in the video.  The third step is the gravy, butter chicken gravy is not very thick or runny. You need to have the gravy in where in you chicken pieces are covered with layer of gravy and you should be able to see oil on top of your gravy.  And the fourth step is smokey flavor. It was Indian tradition to cook on fire using sticks or coal. Which used to give the dish a Smokey flavor.

Ingredients
Step1
400 grams boneless chicken breast
1/2 cup hung curd
1+1/2 tablespoon red chilli powder
1 tablespoon garam masala powder
Salt as per your taste
1 tablespoon besan/ chick pea flour
1+1/2 tablespoon ginger garlic paste
1/2 tablespoon coriander powder
1/4 teaspoon black salt
1/2 tablespoon cumin powder
1 tablespoon mustard oil/ sarson oil

Step 2
Piece of charcoal
1 tablespoon of ghee or clarified butter
Onions sliced

Step 3
3 tablespoon unsalted butter
2+1/2 tablespoon red chilli powder
5-6 tomato puree
1 tablespoon of Honey
2 tablespoon oil
Salt as per your taste
1 teaspoon garam masala
Kasuri methi powder
Fresh coriander leaves
Left out marination
Ginger garlic paste
1/2 teaspoon turmeric

Step by step instructions to make butter chicken



  1. Make slits on butter chicken and keep aside
  2. Put curd, garam masala,red chilli powder, Coriander powder,black salt, regular salt, chickpeas flour,ginger garlic paste, cumin powder, oil and mix well
  3. Now add the slit chicken breast to the curd mixture and coat the chicken throughly
  4. Keep it aside for minimum half and hour
  5. After half an hour,take a grill pan or normal non stick pan and drizzle some vegetable oil over it
  6. Now place the marinated chicken and cook each side of the chicken well
  7. Take out the roasted chicken and cut into bite size pieces
  8. Burn a charcoal and put it in a  small still bowl and put 1 tablespoon of ghee or clarified butter. place it over the chicken and over the chicken for about 10 minutes
  9. Heat oil in kadai or pig size pan, add butter to it
  10. Add ginger garlic paste, fry the ginger garlic paste till the raw smells evaporates from it
  11. Next add tomato puree, let it cool for sometime
  12. Then add all the masalas including the left out marination and cook it the oil oozes out
  13. Add chicken and cream and cook for another 10 minutes
  14. To the chicken add honey and cook for another 5 minutes
  15. Finally add chopped Coriander and the butter chicken is ready to be served
