Egg Curry in Onion Gravy is one of my childhood favorite. This recipe has been Carried forward from generation in my mom's place. We find that egg curry in Onion Gravy is one of the easiest thing to be make for lazy evenings or when you do not have any veggies at home to cook. What ever might be the reason I simple love this recipe. There are many versions of egg curry in onion gravy within my family. Few of them cook just this simple gravy and few cook with some coconut masala (famous in Karnataka) and few make it using the green chillies paste, but the process is still the same. You can try different versions but for me this is one is in my most liked dishes.
Egg curry in onion Gravy can be eaten with chapatis or naan or roti or even Puri or with hot plate of rice with Desi ghee on top. I cannot resist the taste of this curry. But you definitely have to cut lot of onions for this curry if you making it for 5-6 people, this one things is the pain part to make this egg Curry in Onion Gravy. I feel this is the pain part because many of us don't like to cut onions, do you agree with me? But it's that not the case then I am sure you will fall in love with the egg curry in Onion Gravy for sure as it is one of easiest thing you ever make.
To make this egg Curry in Onion Gravy you don't even need lot of masalas, simple masalas that are readily available at home is used in cooking this curry, as I mentioned earlier this recipe is been forwarded from generations, and during our grandparents days or great grand parents days they is to use simple ingredients in there recipes. Ingredients
3 medium size onions chopped
1 medium size tomato chopped
4 eggs
2 +1/2 tablespoon chilli powder
Salt as per your taste
1 teaspoon Coriander powder
1/2 teaspoon turmeric powder
1 teaspoon garam masala powder
2-3 tablespoon of oil
1 tablespoon of ginger garlic paste
chopped Coriander for garnish

Step by step instructions to make egg Curry in Onion Gravy
Instructions
- Heat oil in a pan and add chopped onions to it and saute onions for 5 minutes on low flame
- Add salt and turmeric and cook for a minute or two
- now add red chilli powder, garam masala powder and stir well
- next add chopped tomato and cook till the oil oozes out from the tomatoes
- once the tomatoes are cooked well, add 1 cup of water
- boil the gravy for about 5 minutes on medium heat
- next break the eggs in the gravy ( see video) and cook on low flame for 5 more minutes
- Now tilt the eggs and switch off the flame and let the eggs cookn in its own heat for 3 minutes
- Garnish with chopped Coriander and serve hot
