No butter, less oil eggless coconut sooji cake is the perfect tea time cake to enjoy with hot cup of tea or coffee.
This eggless coconut sooji cake is similar to Basbousa cake and goan cake.
You can make this cake in over or on gas, there is no hard and fast rule to make this cake. Just mix all the ingredients and bake for 45 minutes at 180 degrees Celsius.
I simply live the colour and texture of this cake. Lovely even brown colour of the crust and crumbled cake inside. My house is filled with the aroma of coconut.

Tip:
As I made this recipe during quarantine and many might not be having baking powder at home you can simple increase the amount of baking soda. Instead of adding 1 tsp of soda you can add 1+1/2 tsp soda instead of 1 tsp baking + 1 tsp baking soda.
